It seems as though vertical farm designs all have some sort of ventilation built into them (especially since humans would be working in them!) that moves air/gases (mainly oxygen and carbon dioxide) in and out of the building. The risk of gas build-up is practically zero.
Additionally, the methane generated from composting the non-edible parts of plants and animals will be converted into energy to power the vertical farm.
