Adding lime to soil has to do with pH levels. The pH scale is a measurement of how acidic or alkaline a substance is. As far as plants are concerned, they tend to do best in slightly acidic soil. If the pH drops too low (becomes too acidic), then lime can be added to help neutral the soil back out and help it become more suitable for gardening again.
