The biggest reason would be because fruit stickers aren’t edible. The adhesive that sticks them to the fruit may not be washed off properly, and may cause dirt or other harmful materials to stick to the fruit. Or the sticker itself may not be properly removed, causing an unaware consumer to swallow the sticker by mistake.
Laser etching would carve the information directly onto the fruit, leaving nothing on the surface of the fruit that wasn’t part of the fruit itself.
In addition to the reasons listed above, it would save a lot of materials. Millions of fruit stickers are made per year. This is a waste of both paper and other materials. Laser etching would save money and resources.
