Wagyu is a type specific breed of cow. It is this breed of cow that is bred in Kobe, Japan that is made into Kobe beef. Only Wagyu cows that are slaughtered in Kobe can be certified as Kobe beef, while a member of the Wagyu breed can be slaughtered anywhere and sold legally as Wagyu beef. The reason that it is so much more expensive than other varieties of beef is for its intense marbling. The amount of marbling that is found in Kobe beef or Wagyu beef makes it much richer that other sorts of beef.
