Why is some chicken meat white and some dark?

    The difference between dark meat and white meat on chicken is that dark meat has myoglobin proteins in it. These proteins provide these muscles with more oxygen and they get more exercise, which results in the meat becoming darker.

    This doesn’t mean that dark meat is better or worse for you than white meat or visa versa, it simply means that chickens walk around a lot and use the muscles of the dark meat more.
