The production cost of olive oil is relatively high, often higher than the production cost of good wine. Factor in the different methods of processing that can lend any given batch of oil the “extra virgin” signifier, and you have a product that can be very expensive to make. The price of olive oil needs to cover the costs of production/maintenance/equipment/etc. while also bringing in a profit. That’s why fine olive oil can be so expensive.
