This is just a guess, but in America horses have been raised as work and pleasure animals. When Europeans first settled the east coast and later as we pushed towards the Pacific, horses were far more valuable as tools for farming and transportation than as meat. Meanwhile animals like cattle and pigs provided more meat and were easier to raise since horses require large pastures and are very lean, giving little meat. So as a country we never ate horse where as in other countries, horse meat has been included in dishes and the cuisine fomore tha 6000 years since they were first domesticatedaround 4500 BCE
