Buffalo meat is harder to come by. There are much less buffalo than cattle in the US, let alone animals set aside for consumption. This is why bison or buffalo meat is more expensive as well.
I think that not many Americans eat buffalo meat because it is not readily accessible. Additionally, they do not know the health benefits of using buffalo as an alternative to beef. Buffalo has 25% less cholesterol than beef, and in a 3-1/2 oz. serving there is only three grams of fat, as opposed to beef which has 14g. I think that if i had more access to buffalo meat then I would definitely consume it more.
