Most people haven’t tried edible cactus because it isn’t readily available to them. Cactus is primarily a Mexican delicacy, and is usually only available at Mexican specialty stores and farmers markets. Cactus isn’t grown agriculturally to the extent necessary to make it widely available.
Probably the same reason they don’t eat more nettles, wild mushrooms, cattails, etc. Many wild plants are deliciously edible but are just outside the food paradigm of most Americans. It doesn’t occur to most of us to go outside and gather wild foods and we don’t know how or which ones.
Why don’t you mount a campaign and be another Ewell Gibbons?
