Why does the wavelength decide what color light you see?

In your eye, there are three types of cones to detect light. They all have a strong sensitivity to different wavelengths of light, shorter (violet), middle (yellowish-green), and longer (green.) The cones then each send a signal to your brain based on how much of “their” wavelength of light is perceived, to give a combined sensation of what the color is.
