A significant amount of oil is gotten from tar sands. This process requires heating up the tar sands so the oil will drip off it.

Another reason is when refining oil, it is heated up and at different temperatures, different things are produced and collected. Near the bottom, when the temperature is ~600 degrees Celcius, the residual tar is formed.
