It costs more to buy sustainable foods for a number of reasons. One reason would be that food that is generally not sustainable often uses shortcuts to make things easier or uses less expensive ingredients even if it may not be healthier or sustainable. Also, sustainable food is still in many ways a ‘niche’ market for that reason it is often perceived as a more premium product, which it is but only because the standards have been lowered. Also, as a niche market they often times can’t do things on a large scale, which is why they aren’t able to keep costs low.
