Basically, hair turns gray when the scalp stops producing pigments (either eumelanin or phaeomelanin). Scientists are not exactly sure why the body stops producing pigment, however. Interestingly, all hair starts out as white and during the development of the fetus the body starts producing pigments which then color the hair.
