Because the higher quality Arabica bean prefers higher altitudes and drier climates.  The mountains have drier, nutrient rich volcanic soil which allows for the ability to grow this higher quality bean.

Half of Colombia is covered by forests in which over 55,000 different plant species can be found.  This suggests that conditions would be promising for the growth of any plant.  Additionally, Colombia is the second-largest exporter of Arabica bean coffee, which is one of the more highly regarded types of coffee.
