The reason bamboo grows so fast is that, while it is commonly thought of as a woody plant, it is actually a member of the grass family. Grasses in general grow fast, and bamboo is no exception. Moreover, like other grasses, the root systems of a single bamboo stalk can branch out and form new stalks, so that multiple bamboo shoots can arise from the same underground root network. This enables bamboo to establish a dense network of underground roots, which allows its shoots to grow back quickly year after year, unlike trees.
