Plants turn brown when they die because the chloroplasts in the leaves stop producing chlorophyl. Chlorophyl is what gives plants their green pigment, when the chlorophyl is no longer present in the leaf then you begin to see other colors like red and yellow. When the chemicals that produce these colors also stop being produced, the left over color is usually brown or a darkish lack of color.
