why do some potatoes have a greenish tint to them?

    Usually when a potato has a greenish tint it is because it was not quite ready to be harvested; or in another words, it is not quite “ripe”. I would recommend cutting around that area of the potato as it is usually tougher and takes longer to cut. You can compose the area you cut off.
