Large-scale poultry farmers raise lots chickens in small cages. Due to their higher numbers of chickens raised in relatively smaller spaces, large-scale farmers sell more poultry relative to their costs, and thus operate at a higher profit margin.
In addition, the FDA has requirements on what kind of conditions poultry may be legally raised in, and large-scale farmers, again, have the resources to make sure these requirements are met, while small-scale farmers will find it harder to do so.
