Why do pictures from space have so many colors?

Often when we take pictures from the Earth, ambient light detracts from the color quality of the picture. However, in space there is very little ambient light, thus the colors in pictures appear more vivid. You can notice this when you look at pictures taken from the Hubble Space Telescope.
