Recent reports have shown that the fine residents of New York City are actually consuming less water “per capita” than othe cities. You may be looking at a number that is the total water consumed, and not the “per capita.” A per capita number basically means per person. Thus, New York City would consume more water overall because it has a very large population. But, per person, they do not consume very much water at all. As a matter of fact, New York City residents consume less water than Boston or Denver residents.
Part of the reason is that New York City now requires water-saving devices to be used in renovations or new construction.
They may be drinking a lot of tap water because the water quality is apparently very good in New York. This is the secret ingredient that makes their pizza and bagels so appealing.
