Why do people believe that organic vegetables have more nutrients?

    People believe all kinds of interesting things. Probably because they know that organic is supposed to be better for them and that might get a little muddled.

    There might be a bit of truth to it though. Organic farmers tend to go into bio-diversity more than your big conventional farmer, and often even let the fruit/veggie RIPEN before harvesting. That just might add some nutritional value depending on the product.

    University of Copenhagen researchers tested carrots, kale, mature peas, apples and potatoes, grown organically and conventionally, and found they had the same nutritional value. Thanks to increase popularity of organic stores and marketing, people see the term organic and immediately think it’s the better choice. A Harris found that most Americans believe organic is healthier, safer, and better for the environment.
