The largest enemy to food when it comes to spoiling is air. Air will cause food to spoil as it can carry bacteria or particles that will cause food to mold or decompose. Canning sterelizes food and removes all excess air from the can or jar it is placed in. Food must be boiled before it is canned. This removes all unwanted bacteria from the food as well as seals the jar or can, keeping all contaminates out. Canning has a bit of a love/hate relationship with certain people. Some believe that the flavor of food is altered too much during canning. But, many have embraced the technique and it has been a tradition for hundreds of years that is still highly regarded in many places.
