The chickens aren’t still alive, but their nervous systems still have signals running through them after decapitation. The nervous “memory” causes the birds’ bodies to thrash about and even run around for a bit after death.
It’s a result of the nervous system working without the brain. The chickens are no longer alive, but there are pulses directing them to do “something”. They just don’t know what.
