Truffles are expenive in part because they are often foraged from the wild and are rather rare. Hunting and gathering wild truffles in time intensive and the relative low abundance of wild truffles, allows for demand to be higher than what is available, which drives up the price.
They are expensive because they need very ideal conditions to grow, and are very rare. They are also difficult to find and harvest.
