Muscles are red because of a protein called myoglobin. This protein is important for oxygen storage. In birds, this is why there is a difference in dark and white meat. Dark meat is usually found in the legs and needs more oxygen storage for walking and posture. White meat is usually found in the breast which contain the muscles needed for flight and are often used for short quick flights that need less oxygen storage.
