When the branches are broken they produce copious amounts of a very thick sap. All gum trees are a type of Eucalyptus but not all Eucalyptus are gum trees.
There are several kinds of gum trees;
Sweet gum (http://www.assateague.com/gum.html)
Black Gum (Black Tupelo) (http://www.tree-pictures.com/black_tupelo_tree_pictures.html)
Various Eucalyptus Trees (http://www.gondwananet.com/australian-gum-tree.html)
As greenjellybean said, they produce thick sap or resin, which is where they get their name.
