Why are green apples more bitter than red ones?

    Flavor is a component of the tree. The green apple tree variety better known as Granny Smith’s contains a higher percentage of citric acid known as vitamin C than other apples allowing it to stay whiter on the inside after being sliced and exposed to air than red delicious apples. This citric acid is a flavor component which contributes to the tartness of the Granny Smith’s apples over other apples.
