Why are oil fields in some of the most beautiful places?

    It would depend on what “beautiful” meant to you – but high fossil fuel deposits originate from prehistoric density organic material, so essentially the detritus of prehistoric rainforests and other fertile (beautiful) places became the oil, coal and natural gas deposits of today – some of these areas changed in the mellennia since due to variable climate change and water availability (the deserts of the middle east were once very fertile and highly vegetative areas) while others continued on as they were.
