Why is Agave being compared to High Fructose Corn Syrup?

According to a study by the Weston A. Price Foundation, agave nectar is manufactured from the starchy agave root bulb the same way cornstarch is turned into high fructose corn syrup. The Foundation reports that agave nectar is as highly processed and artificial as HFCS and just as unhealthy. Only lax FDA labeling laws allow agave nectar companies to market their products as much more “natural” and “traditional” than they actually are.
