Well, I think the best is a matter of opinion. But one of the most prominent would have to been Henry David Thoreau. His most famous work, Walden, published in 1854, is about independence and spirituality. He lived in a cabin in the woods away from town, and strove to live life simply and self-sufficiently. He emphasized closeness to nature and criticized consumerism. He can be considered an environmentalist in that regard.
