There is no single recognized “best” eco-friendly farmer in the U.S. If there were, however, one likely candidate would be Joel Salatin. Salatin raises his livestock in very eco-friendly ways, sells his meat directly to local restaurants and consumers, and has written at least six books about eco-friendly farming and the problems with many farming techniques in wide use in the U.S. He was also featured in Michael Pollan’s book, The Omnivore’s Dilemma.
