My understanding is that white cornmeal comes from corn varieties that are white, yellow cornmeal comes from corn varieties are yellow and blue cornmeal comes from corn varieties that are blue. So, unlike brown and white rice, for example, no extra processing goes into making white cornmeal or yellow cornmeal. So, its impact on the environment comes primarily from the agricultural methods used to grow the corn. As long as the corn varieties are cultivated using similar methods, then likely neither variety will be better or worse for the environment.
