There doesn’t seem to be a lot of research on this exact topic, but it seems like most of the vegetarians of the United States live in the west (5 percent of residents of the west are vegetarians), followed by the south (4 percent), the northeast (3 percent) and the midwest (1 percent), in that order. About 3 percent of Americans are vegetarians whereas only .8 percent of the American population calls themselves vegan. Similarly, Portland is the most vegetarian-friendly large city, followed by Seattle, San Francisco, New York, Atlanta, Washington, D.C., Minneapolis, Austin, Philadelphia and Chicago. Asheville, North Carolina is the most veg-friendly small city, with Eugene, Oregon, Salt Lake City, Norfolk, Virginia and Santa Monica rounding out the top five in that category.
Since the greatest percentage of vegetarians live in the West, and California is the most populous state by far, it makes sense that California is home to the most vegetarians and vegans.
