Which trees provide good syrup?

    Besides the obvious answer of maple trees, the sap of palm trees is said to be both edible and nourishing. The larch tree (found in the Rocky Mountains) also produces an edible sap that, combined with sugar, makes a syrup which supposedly tastes like bitter honey. Other trees that can be tapped include red maple, sweet birch, hickory, walnut and sycamore. For most of these species, the sap run starts a little later than the maples, in early spring, and they are less sweet than sugar maple.
