There are many edible types of peppers, but the black pepper we season food with is made from ground peppercorns. Peppercorns are a dried berry, the fruit of a plant called Piper nigrum. The plant was originally native to south India, was known to the ancient Greeks and Romans, ant today is grown in all warm, moderately damp areas with plenty of organic material in the soil. The biggest producer of black peppercorns are Vietnam, with about 34% of the world’s output, followed by India, Brazil, Indonesia, Malaysia, Sri Lanka, China and Thailand.
Pink peppercorns, and green and red bell peppers and chile peppers come from plants that we now know to be unrelated to the black peppercorn plant.
