The majority of the oysters eaten in America come from American bays and estuaries and are usually farmed and harvested under very strict scrutiny. Oysters are the most commonly farmed mollusk in the world with 4.5 million tonnes processed each year. Many oyster farms grow their shellfish either in huge tanks of under closely guarded patches of sea and seafloor. Shellfish are very sensitive to water pollution since they are filter feeders and production of many oysters in heavily polluted areas has either moved of gone onto the shore in large tanks. Additionally, there a number of programs around the nation that grow manly shellfish in tanks offshore as babies and then transplant them into dirty waters to help clean them up. There remain very few true oyster catchers who did random holes in the sand for these elusive mollusks.
