Where do food carts like the ones in Portland get their electricity?

Food carts around the world, much like the famous Portland food carts get their electricity from diesel or petrol powered generators. This is the loud engine noise that can be heard around these stalls and is part of the out-door food cart culture. The generators can usually produce up to 20kW of power and is enough to run a stove top, micro wave and a small grill.
