    In reality, tree sap neither rises or falls. The whole process is one of (de) and (re)hydration. In the spring the tree begins to transport more water from the soil up into the tissues as a way of beginning the process of leaf out. In the fall the tree begins to remove water from its tissues as protection from freezing temperatures.
