This has occurred mainly over the past century, but very gradually. With the rise in technology and the need for more food, due to the growing population, the food market became mainly processed. Factories churn out more food this way.
We have begun eating more processed food as urbanization became more popular. People left the farm for work in the city at factories or shops. They could no longer easily grow their food and the demand increased for other options.
At the same time, technology in food preservation also improved. It became easier and cheaper to process food for longer storage. People began to purchase these items, leading to more demand and there more processing.
All of this has happened in just the last century or so and continues to expand with new foods and new processing types.
