Wheat bread is much more eco-friendly than white bread. White bread goes through a refining process which both strips it of healthy nutrients and requires more energy. It is bleached as well, and the chemical additives are very harmful to the environment. One is Benzoyl peroxide which can be fatal for many birds, fish, animals, and plants. Another is Chlorine Dioxide which has been dog-eared in the US as one of the most harmful chemical compounds. It dissolves quickly, but it also acts as a harmful pesticide and a hazard. Some brown breads also aren’t made with whole wheat and could be dyed brown using caramel. These may go through a refining process to a lesser degree, but even the most processed brown bread is more environmentally friendly than white bread.
