This is a very extreme and impossible situation. It is not possible that every last animal on earth disappeared. But in that scenario it would mean an end to all life because animals and plants work with each other and we humans rely on the action of those plants and animals without even knowing it. Everything would be thrown off balance in the natural world.
There is a possibility of micro-organsims, fungi, bacteria and insects remaining functional without mammals and birds. The types of plants that would survive in this world would be limited (for example, bird pollinated plants would no longer survive; same with oaks that germinate primarily from acorns burried by the industrious squirrel). This world would be drasitically different from the world we now know.
