What types of cultures are used to make cheese?

    Various cultures are used in cheese production.  They type of culture varies by what type of cheese is being produced.  For example, in the production of Chevre (a goats milk based cheese) the bacteria s. lactis and s. cremoris may be used.  In blue veined cheese production, mold may be used as well such as Penicillum Glaucom.
