It looks like the Squab is the smallest bird that Americans eat. A Squab is the meat from a small domestic pigeon. These birds are killed just before they’re capable of flying (roughly four weeks), so that the meat is tender. Squabs usually weigh about one pound (or less) so there’s not a lot of edible meat.
When shopping at the grocery store, the smallest bird I typically see available for sale is the cornish hen. These weigh about 1-2 pounds and are popular for roasting, although I’ve never known anyone to eat them regularly. Quail are even smaller than cornish hens and are used in certain traditional recipes, but I’ve never seen these for sale at the store.
