Garlic has been used throughout recorded history and since it’s discovered use in food and medicine, has been domesticated and cultivated in many places over the globe. California produces nearly all the garlic in the United States, but the garlic that is commercially grown is not necessarily native to the region. Garlic is believed to have many wild ancestors in southwestern Asia, Britain and North America from which the garlic we know and love have been selectively bred. One reason its difficult to determine the native region of garlic is because garlic that is selected to be planted, or the cultivar, is sterile.
