There are a bunch of “weeds” that are used as herbs throughout the world. Goldenrod, for example has been used as an herb throughout history by Native Americans. Wild onions and wild garlic are considered weeds, but many also use them in cooking as herbs. Chickweed is worldwide used as a garnish for dishes, and devils nettle is known to add a peppery flavor to salads.
Herbs are things like basil, oregano, and cilantro. Herbacous plants are things that are not woody (trees, shrubs are woody). Weeds can be anything as a weed is something that is growing where we do not want it to grow. What we commonly think of as a weed (things growing out of place in our gardens or flowerbeds) are herbacious plants.
The dandelion is a plant commonly thought of as a weed that must be removed from lawns. However, all parts of the dandelion have beneficial qualities. The leaves might become part of a mixed greens salad or be used to make hot tea. The flowers could be a salad topper, or they might be an appetizer if you fry them. They could even be used to make dandelion wine. Furthermore, the roots may be used as a coffee substitute.
The dandelion has been revered as a potent type of herbal medicine. It has been used in treatments for liver problems, upset stomach, swilling, heartburn, loss of appetite, fever, and diarrhea.
You might want to give dandelion a try one day. It can provide iron; zinc; potassium; and vitamins A, B, C, and D.
