What nutrients does whole wheat have that white flour does not?

    Whole wheat flours have almost double the amount of vitamin B1, B2, B3, E, folic acid, calcium, phosphorus, zinc, copper, iron, and fiber than bleached, white flour.

    I would recommend eating whole grains whenever possible.  Just because you choose wheat over white does not mean that it hasn’t been refined.  A lot of times, it’s refined and then the nutrients are added afterwards, which is not quite the same as the real, unrefined thing.
