What nutrients do mushrooms give us?

    Different types of mushroom evidently have widely differing nutritional values. Although I’ve read elsewhere that mushrooms don’t contain protein, my first source below claims (in Chapter 2, “The Nutritional Attributes of Edible Mushrooms) that some species are higher in protein content than milk and than most vegetables.

    Mushrooms can be rich in amino acids; compounds such as thiamine, niacin, and ascorbic acid (among others) are commonly present. Mushrooms are a good source of some minerals, including copper, potassium, and selenium.
