This may not be comforting, but we may not yet know what the most dangerous chemical is. It can take decades for some effects to become obvious. And decades for thorough research. As an example, we all know cigarette smoke is bad, but it wasn’t known until very recently it was discovered that even brief exposure can be enough to set off a chain of events that decades later might result in cancer.
If you want an example of a food chemical that is banned in the US, but not, for example in India, look at DDT.
Another approach, rather than worrying about a thousand chemicals, is just to follow the recommendations of a list “Top Foods to Eat Organic”. #1 on many lists seems to be apples, found to have more than 40, count ’em 40 pesticides in common use.
