The veggietable.com provides different recipes to choose from for a vegetarian Christmas dinner. they divide them into a menu format so you can pick and choose what sides, main dishes, or desserts you want to include.
One example of a vegan Christmas meal might include appetizers of roasted chestnuts and garlic soup, ratatouille or winter squash risotto as the main dish with sides of stuffed sweet potatoes and mashed potatoes. Mulled wine to drink and an apple pie for desert.
An appetizer could be a vegetable crudite with avocado dip. Tofu shaped into a Turkey, pureed pumpkin soup, Brussel Sprouts, Green Beans with slivered onions, mashed sweet potatoes with vegan butter and brown sugar, apple tarte with dairy free crust with soy vanilla ice cream, spiced apple cider. So many things can make a Vegan meal!
For Christmas, we had spaghetti with TVP “meat” sauce. We also had a fresh green salad, homemade garlic bread, mashed sweet potatoes and a side of green beans. For dessert, we had coffee and vegan apple pie coffee cake. You can “veganize” almost any recipe, so the possibilities are endless!
On the menu for a vegan Christmas dinner could be a “nut roast.” Chestnuts, walnuts, or cashews can be used as the base, along with celery, onions, mushrooms, and breadcrumbs to add shape. The “roast” could be topped with vegan gravy, and accompanied by sides such as cranberry sauce, green beans, and soup.

Preheat oven to 350. Mash sweet potatoes when soft. Whisk all other potato ingredients together then add to mash. Mix well and pour into casserole dish. Mix topping ingredient together, then sprinkle over top of mash. Bake for 45 min.
For appetizers, I would probably serve crudites with hummus. For the main meal, I might serve Vegan roasted red pepper lasagna with roasted buternut squash and cranberries and roasted Brussels sprouts. For dessert, I would serve fresh fruit, and any sort of veganized dessert I thought my guests would enjoy!
