What makes hay bails such a good insulator?

I think you mean straw bales. For insulation in houses straw bales are used, not hay bales. The three main reasons for this are:

    1. No food – hay bales are a food source while straw bales are simply stalks with no grain.
    2. Low moisture – straw bales are ideal because they contain little moisture. If you used hay bales (which do contain a lot of moisture) as insulation they can grow mold or run the risk of a fire as they decompose
    3. No growth – if you used hay bales you run the risk of their seeds growing grass on your walls…which can really create a pest problem for your house
